Ingredients
- 2 tsp olive oil
- 1/2 cup chopped green bell pepper, chopped
- 1/2 cup chopped red bell pepper, chopped
- small onion, chopped
- 2 cloves garlic, minced
- 1 cup uncooked long grain rice
- 15 oz can black beans (don’t drain)
- 1 1/2 cups water
- 1/2 tsp cumin
- 1 bay leaf
- pinch oregano
- 1 tsp white vinegar
- salt and pepper to taste
Steps
- Heat 2 tsp of olive oil in a medium pot over medium-high heat. Add onion, bell peppers and cook until soft, about 10 minutes. Add the garlic, oregano, and cumin, cooking for 1 additional minute.
- Pour the black beans into the pot, stir to incorporate. Add rice, water, and bay leaf. Bring to a simmer. Cover, and reduce heat to medium-low. Cook for about 25 minutes, or until the rice absorbs the water. Remove from heat and let sit for 5 minutes.
- Add vinegar, and salt. Stir. Serve.
