Churro Bites

    Ingredients

    • Vegetable oil, for frying
    • 1 cinnamon stick
    • 4 tablespoons (1/2 stick) unsalted butter, cut into cubes
    • 1 teaspoon sugar
    • 1/2 teaspoon kosher salt
    • 1 cup flour
    • 4 eggs
    • 2 cups granulated sugar
    • 1 tablespoon ground cinnamon
    • 1/2 cup heavy whipping cream
    • 2 (3.2-ounce) disks Mexican chocolate, chopped

    Steps

    1. Heat oil in a pan to 350 F.
    2. In a medium saucepan, combine milk, water, butter, sugar, and salt.  Bring to a boil, and immediately remove from heat, stirring in vanilla, eggs, and flour until dough forms. Transfer to a bowl to cool.
    3. Combine sugar and cinnamon in a shallow bowl.
    4. Once cooled, transfer the dough into a pastry bag, and pipe one-inch pieces of dough, cutting with scissors, into the hot oil. Cook until golden brown, about 3 minutes.
    5. Toss the warm churro bites in the cinnamon-sugar mixture.
