  • 1 1/2 pounds boneless, skinless chicken thighs (trimmed of excess fat, if
    necessary)
  • 1 cup evaporated milk
  • 1 small onion, finely chopped
  • 1/4 cup chopped green onions
  • 1/4 cup heavy cream
  • 2 1/2 teaspoons salt
  • 2 cups plus 2 tablespoons all-purpose flour
  • 2 tablespoons freshly ground black pepper
  • 2 teaspoons minced garlic
  • 3/4 cup brewed coffee
  • 3/4 cup chicken stock or packaged low-sodium chicken broth, plus more if
    needed
  • Cheddar and Green Onion Biscuits
  • Vegetable oil, for frying
