Ingredients
- 1 1/2 cups chicken broth
- 1 Tbsp. olive oil
- 1 cup long-grain rice
- 1 tsp. salt
- 1/2 cup cilantro, chopped
- 2 Tbsp. fresh lime juice
- 2 to 3 cloves garlic, minced
- zest from one lime
Steps
- Heat oil in a medium saucepan over medium-high heat. Add the uncooked rice to the pan, stirring to coat with oil. Cook until the rice starts to brown. Add the garlic and cook for one minute.
- Add the water, salt, and lime zest. Bring the water to a boil, cover the saucepan, and lower heat to low. Cook for 15 minutes. Remove from heat, and let the rice rest for 10 minutes.
- Stir in cilantro and lime juice. Toss to incorporate the cilantro-lime.
