Cilantro Lime Rice

    Ingredients

    • 1 1/2 cups chicken broth
    • 1 Tbsp. olive oil
    • 1 cup long-grain rice
    • 1 tsp. salt
    • 1/2 cup cilantro, chopped
    • 2 Tbsp. fresh lime juice
    • 2 to 3 cloves garlic, minced
    • zest from one lime

    Steps

    1. Heat oil in a medium saucepan over medium-high heat. Add the uncooked rice to the pan, stirring to coat with oil. Cook until the rice starts to brown. Add the garlic and cook for one minute.
    2. Add the water, salt, and lime zest. Bring the water to a boil, cover the saucepan, and lower heat to low. Cook for 15 minutes. Remove from heat, and let the rice rest for 10 minutes.
    3. Stir in cilantro and lime juice. Toss to incorporate the cilantro-lime.
