    Ingredients

  • 1 Tbsp neutral flavor oil
  • ½ Negi/Long Green Onion (sub: ½ leek or 2 scallions/green onions)
  • ½ lb thinly sliced beef (chuck or rib eye) (½ = 227 g) (ribeye or top sirloin)
  • 2 packages Udon noodles
  • 1 Tbsp soy sauce
  • ½-1 Tbsp sugar
  • 2 cups dashi (2 cups = 480 ml)
  • 1 Tbsp soy sauce
  • 1 Tbsp mirin
  • 1 tsp sugar
  • pinch salt
  • Narutomaki
  • 3 sprigs Mitsuba
  • 1 green onion/scallion
  • Shichimi Togarashi
