Apple and Cinnamon Pancake

    Ingredients

    • 1 1/2 cups all-purpose flour
    • 2 teaspoons baking powder
    • 3/4 teaspoon ground cinnamon
    • 1/4 teaspoon fine salt
    • 1 cup milk
    • 1/4 cup packed light brown sugar
    • 1 teaspoon pure vanilla extract
    • 2 large eggs
    • 4 tablespoons unsalted butter
    • 1 small red-skinned apple, cored
    • For serving: maple syrup or honey

    Steps

    1. In a bowl, whisk together the flour, baking powder, ground cinnamon, brown sugar and salt. In a seaprate bowl, whisk together the milk, vanilla, eggs, and butter. Add to the dry ingredients. Stir in the apple.
    2. Preheat a pan over medium heat. Pour the batter in the pan. Cook until the bubbles on top start to pop and both sides are golden brown.
