Ingredients
- 1 fresh English cucumber
- 3 garlic cloves, mashed
- 1 tbsp. rice wine vinegar
- 1 tbsp. light soy sauce
- 1/2 tsp. sugar
- 1/2 tbsp. sesame oil
- 1/2 tsp. salt
- 1/2 tbsp. chili oil to taste
Steps
- Rinse the cucumber and pat dry. Cut crosswise into fourths. Cut each piece in half lengthwise.
- Lightly smash the cucumber pieces until the seeds are removed. Discard the seeds.
- Place the cucumber in a strainer, and add a pinch salt and sugar. Place the strainer over a bowl to catch any liquids. Drain for 15 minutes.
- In a small bowl, make the dressing by mixing the salt, sugar, and vinegar. Mix until the salt and sugar have dissolved, then add the sesame oil, chili oil, soy sauce, and garlic.
- When ready to serve, drizzle the dressing over the cucumbers.
