Black Beans and Rice

    Ingredients

    • 2 tsp olive oil
    • 1/2 cup chopped green bell pepper, chopped
    • 1/2 cup chopped red bell pepper, chopped
    • small onion, chopped
    • 2 cloves garlic, minced
    • 1 cup uncooked long grain rice
    • 15 oz can black beans (don’t drain)
    • 1 1/2 cups water
    • 1/2 tsp cumin
    • 1 bay leaf
    • pinch oregano
    • 1 tsp white vinegar
    • salt and pepper to taste

    Steps

    1. Heat 2 tsp of olive oil in a medium pot over medium-high heat. Add onion, bell peppers and cook until soft, about 10 minutes. Add the garlic, oregano, and cumin, cooking for 1 additional minute. 
    2. Pour the black beans into the pot, stir to incorporate. Add rice, water, and bay leaf. Bring to a simmer. Cover, and reduce heat to medium-low. Cook for about 25 minutes, or until the rice absorbs the water. Remove from heat and let sit for 5 minutes. 
    3. Add vinegar, and salt. Stir. Serve.
