Cast Iron Bacon and Pepper Pizza

    Ingredients

    For One Small Pizza:

    • Pizza Dough (roughly the size of a tennis ball),  lightly rolled out
    • 4 tablespoons of pizza sauce
    • 56 grams Low Moisture Mozzarella Cheese
    • 1 tablespoon Banana Peppers
    • 1 slice of bacon
    • Flour, for dusting

    Pizza Sauce Recipe:

    • 28 oz can of crushed tomatoes
    • 2 teaspoons granulated garlic
    • 1 teaspoon dried oregano
    • 1/2 teaspoon dried basil
    • 1/2 teaspoon red pepper flakes
    • 1/2 teaspoon kosher salt
    • splash of olive oil

    Steps

    1. Place cast iron skillet in oven and preheat to 500º F or highest setting. While the oven is preheating, allow pizza dough to come to room temperature, at least 30 minutes. 
    2. Combine tomatoes, garlic, oregano, basil, red pepper flakes, salt, and olive oil into a food processor. Blitz until processed.
    3. Add flour to a cutting board or counter top. Using your knuckles, work the dough into the shape of a circle, trying to keep the dough level.
    4. Pick dough up with one hand. With the other hand, pinch your fingers together like you’re an Italian gesticulating. Place the dough on the gesticulating fingertips. Gesticulate with free hand, and place in the center of the dough. Using both hands, knead externally while rotating the pizza dough. The dough should begin to stretch and begin to droop over your hands. Let gravity do its thing. Stretch dough until a disc shape has formed.
    5. Once the oven is up to temperature, remove the cast iron and add the pizza dough. Quickly add the pizza sauce, cheese, and toppings. Try to keep an even layer of cheese and toppings, with the toppings evenly distributed and away from the center.
    6. Bake for 7 minutes, or until the cheese starts bubbling. Remove the pizza from the oven and let cool for 5 minutes.
    7. Slice and serve.
