Crispy Breakfast Potatoes

    Ingredients

    • 5 golden potatoes, diced
    • 1 yellow onion, diced
    • 1 red bell pepper, diced
    • 2 tablespoons canola oil
    • Salt, to taste

    Steps

    1. Bring a large pot to a boil and preheat your oven to 450 F. Add the potatoes to the pot and simmer for 15 minutes.  Remove the potatoes and place into a strainer to remove any excess water.
    2. Once the potatoes have drained, line a cooking tray with aluminum foil and spray  with cooking oil. Place the potatoes, onion, and bell pepper on the tray. Cook in your oven for 20 minutes. Remove the tray from the oven once 20 minutes have passed.
    3. Heat a cast iron pan over medium-high heat. Add the canola oil, followed by the potatoes, onions, and peppers. Cook until the potatoes are golden brown, stirring occasionally to prevent the onions and peppers from burning. 
    4. Using a slotted spoon, transfer the ingredients from the pan into a large bowl. Sprinkle with salt, and toss to incorporate.
