Emeril’s Restaurant Sweet Corn Muffins

    Ingredients

  • 3 eggs
  • 1/2 cup vegetable oil
  • 1/2 cup water
  • 2 tablespoons heavy cream
  • 2 tablespoons buttermilk
  • ¼ cup honey
  • 2 tablespoons melted and cooled butter
  • 2 scant cups all purpose flour
  • ¾ cup cornmeal
  • 1/3 cup sugar, plus more for sprinkling
  • 4 teaspoons baking powder
  • ¾ teaspoon salt
