Ingredients
- 2 pounds skin-on, boneless chicken thighs
- Cooking oil
For Marinade:
- 1 cup thinly sliced red onion
- 2 tablespoons minced garlic
- 2 tablespoons minced peeled ginger
- 1/4 cup soy sauce
- 1/4 cup fresh tangerine or orange juice
- Freshly ground pepper, to taste
Steps
- Combine the marinade ingredients in a bowl and whisk together. Place chicken in a large baking dish or sealable container. Pour the marinade over the chicken, letting the chicken marinate for at least 30 minutes.
- Heat a frying pan over medium heat. Spray with cooking spray.
- Add the chicken to the pan, cooking about 6 minutes per side. You want the chicken exterior to carmelize. If the chicken starts to burn, reduce the heat of the pan.
