Roasted Baby Carrots

    Ingredients

    • 2 lbs baby carrots, patted dry
    • 2 1/2 Tbsp olive oil
    • 3/4 tsp kosher salt
    • 1/4-1/2 tsp black pepper
    • 2 garlic cloves, minced

    Steps

    1. Preheat oven to 425º F. Spray a baking sheet with cooking oil.
    2. Mix all the ingredients in a bowl, except for the carrots. Toss the carrots in the mixture, making sure the carrots are thoroughly coated.
    3. Bake for about 35 minutes, stirring occasionally, or until the carrots are tender.
