Ingredients
- 2 lbs baby carrots, patted dry
- 2 1/2 Tbsp olive oil
- 3/4 tsp kosher salt
- 1/4-1/2 tsp black pepper
- 2 garlic cloves, minced
Steps
- Preheat oven to 425º F. Spray a baking sheet with cooking oil.
- Mix all the ingredients in a bowl, except for the carrots. Toss the carrots in the mixture, making sure the carrots are thoroughly coated.
- Bake for about 35 minutes, stirring occasionally, or until the carrots are tender.
