    Ingredients

  • 2 pounds white boiling potatoes, peeled and cut into 3/4-inch cubes, or small red potatoes,
  • 1/4 cup fresh lemon juice
  • 1 tablespoon chopped fresh oregano
  • 3 tablespoons chopped fresh parsley
  • 1/4 cup extra-virgin olive oil
  • Kosher salt and freshly ground black pepper
  • Smoked paprika, to taste
